How do we teach multiple ages at the same time?

We have a 7-year-old and an 11-year-old and I'm struggling to plan lessons that work for both. Any approaches that have helped your family?
We use project-based units — a theme like 'the ocean' can stretch to any level. The older child dives deeper, the younger does hands-on work.

The older sibling teaches the younger one. It consolidates their knowledge and gives them real responsibility.

Read-alouds are great for all ages together. Then split for independent work at each child's level.
